Christmas Eve Box

Gabriel's Christmas Eve Box

Last year (2013) I made this for my baby nephew Gabriels first Christmas Eve.  I really loved how it turned out, hope he liked it too! 

Here's what I used to make it, 

1 Christmas gift box (I decorated the inside lid with Christmas stickers) 
1 Nativity story board book
1 Christmas pj onesie with matching hat (cute right!)
1 DVD of Christmas cartoons
1 Soft Snowman toy
1 2013 babys first Christmas bauble 
1 Christmas Eve bib

And I even included 2 selection packs of sweets for his Mom and Dad

Whisky Wishes Birthday Cake


David's Whisky Wish Birthday Cake





This cake was a request from my cousin, he asked for whisky and chocolate flavour birthday cake, jokingly.  Whisky however is not really something you can add to a cake without adding lots of fruit, a thing our family doesn't like, so it got me thinking and this was the result!
 
A Chocolate and Vanilla checkerboard cake with white buttercream frosting, finished off with some proper Teachers Whisky Liqueurs.  He got his wish for Whisky cake and it went down a treat!


 
Recipe

Chocolate sponge

225g plain flour
350g caster sugar
85g cocoa powder
1½ tsp baking powder
1½ tsp bicarbonate of soda
2 eggs
250ml milk
125ml vegetable oil
2 tsp vanilla extract
150ml boiling water

Vanillia sponge

300g plain flour
350g  caster sugar
1½ tsp baking powder
1½ tsp bicarbonate of soda
2 eggs
250ml milk
125ml vegetable oil
2 tsp vanilla extract
150ml boiling water

Preheat the oven to 180C/ gas 4. Grease and line your three checkerboard tins.

For the cakes, place all of the cake ingredients, except the boiling water, into two large mixing bowls. Using an electric whisk, beat the mixtures until smooth and well combined.
Add the boiling water to the mixtures, a little at a time, until smooth.






Divide the cake batters between the three checkerboard tins following the instructions for your tins and bake in the oven for 25-35 minutes, or until the top is firm and a skewer comes out clean.  Remove from tins and allow to cool completely.

Icing

400g butter, softened

2 tablespoon milk

1 teaspoon vanilla

800g Icing sugar

Beat butter, milk and vanilla in medium bowl with electric mixer on low speed until smooth. Gradually beat in icing sugar, bit at a time, until smooth and spreadable.

To decorate:

Liqueurs, I used Teachers Whisky,

And then a sprinkle of edible silver stars and a little nestle Milky Way star for the centre  :) 


Think it's safe to say it went down well!

JB's Favorite (Favourite?) Christmas Cookies

Each year, my family and friends look forward to the Christmas holidays because of the promise of "American Christmas Cookies" (as they've come to be known) being delivered to them to enjoy.  Now, I tend to make a new kind of cookie every year, just to keep things interesting, but I have several "staples" that I always make.

These cookies, on my recipe card that is handwritten by my Mom, are simply known as "JB's Favorite Christmas Cookies".  I have no idea what the rest of the world may officially call them, and to be honest, I don't want to know!  There is something supremely comforting about knowing that this kind of cookie is my big brother's favourite (since he was four years old!).  It is also the cookie of choice of my Mother-in-Law, for about a decade now.

The cookies are soft on the inside and firm on the outside.  There is just a hint of cinnamon, but the cookies are not too sweet.  The crackle given by the Confectioner's sugar gives the sensory impression of a light snow on a cookie.  Don't take my word for it, try them yourself! 

You may wish to make a double batch...just ensure that you have enough room in your mixing bowl!  This cookie is a surefire way to please people on both sides of the ocean around the holidays.

JB's Favorite Cookies
(since he was 4 years old)

2 cups sifted all-purpose (plain) flour
2 tsp. baking powder
1 tsp. cinnamon
3/4 tsp. salt
1/2 cup shortening
12/3 cup firmly packed brown sugar
2 eggs
1 tsp. vanilla
1/3 cup milk
2 squares baking chocolate - unsweetened and melted
2/3 cup chopped nuts (optional)
Confectioner's sugar

Directions

Sift flour, baking powder, salt and cinnamon.

Cream shortening with brown sugard until light and creamy.  Beat in eggs and vanilla.

Add melted chocolate.

Add flour mixture alternately with the milk.  Add nuts (JB doesn't.)

Chill until firm, about 2-3 hours.

Shape into one-inch balls, roll in Confectioner's sugar.  Bake on greased cookie sheet at 350F (180C) for 20 minutes.

Yield: 5 dozen cookies

Note: This photo is of the "leftovers" of all of my "American Christmas Cookies" after just 20 minutes in my office at work.  To begin with, there were a dozen of each kind!
